From the Foothills of the Berkshires

Pencil Hill Farm is a market garden in Wassaic, New York, growing vegetables and herbs alongside a small flock of fiber sheep on beautiful farmland at the foothills of the Berkshires.

We focus on exceptional flavor and nutritional quality while building healthy soil, increasing biodiversity, and caring for the land that supports us.

Farming with the Land

While our focus is growing exceptional vegetables, we do so in a way that leaves the land healthier over time. That means feeding the soil with compost and cover crops, disturbing it as little as practical, growing a diverse mix of crops, and making room for insects, birds, and other wildlife.

Our sheep are part of that system too, grazing the farm’s pastures and returning nutrients to the soil. Together, the garden, pastures, and surrounding habitat make up one farm, and we try to care for them that way.

Overall, our approach is rooted in respect and awe for the abundance and diversity of life on the farm and in the surrounding landscape. Rather than working against natural processes, we work with them and create the conditions for healthy soil, healthy plants, and vegetables that are nutritious and full of flavor.

Built for a Long Season

Our production is planned around repeated successions, protected growing, and season-extension techniques to provide fresh vegetables consistently from early spring through late fall. We focus on clear communication, realistic commitments, and dependable availability for CSA members, market customers, and restaurant partners.

Seasonal Vegetables
A varied harvest of tomatoes, peppers, cucumbers, squash, root crops, beans, brassicas, and other vegetables throughout the season.

Greens & Herbs
Lettuces, salad greens, cooking greens, and fresh herbs throughout much of the season.

Wool & Yarn
Wool from our fiber flock, with yarn and other fiber products as they become available.
